Abstract

Pomegranate is one of the most beautiful fruits known to mankind since ancient times, and it is considered to be a healthy, perfect, protective food.
The first part was the current study aims to evaluate the possibility of using pomegranate in food products and its effect on rat infected by hyper cholesterol. For this purpose , five products of cake were prepared by adding five levels from pomegranate peel and juice (15% pomegranate peel , 20% pomegranate peel,15% pomegranate juice, 20%pomegranate juice and 10% pomegranate peel + 10% pomegranate juice) replacement, respectively , with studying sensory properties for these products . As well as, Second part evaluate the effect of pomegranate peel and juice on rats infected by hyper cholesterol and study the effect of levels of pomegranate peel and juice on the percentage of body weight gain (%), food intake, feed efficiency ratio ,organ weight / body weight % , serum lipid profile and liver enzymes .
The results obtained from the sensory tests indicated that, sensory evaluation showed an acceptance of all supplemented food products.
from the results of biological assessment, it was observed that treated hyper cholesterol rats with pomegranate peel and juice led to decrease in both of: weight gain, feed efficiency, blood lipid profile(TC,TG,HDL-c, and LDL-c).
Histopathological examination of liver:
Histological section of liver tissues. 40 X stained with H&E photo (A1) Histological section of liver tissues of normal control group shows no fatty changes with normal tissue architecture and regular morphology of hepatic cell.
