Abstract

To ascertain the situation microbial poultry meat and products displayed in the Egyptian market, in this study 200 samples per 40 samples of each type of poultry meat (breasts and hips) and poultry meat products (Berger - Luncheon - Frankfurter) traded in markets in Cairo, Menoufiya and appreciation.
It included a bacteriological examination to determine the total count of aerobic microorganisms, total count, the microbes Escherichia coli with the classification of microbes isolated, the total count of microbes Staphylococcus, counting and classification of microbe aureus, isolation and identification of Salmonella microbe and microbe Aliicherichiya attempt to isolate E. coli. While comprised Almikologi examination to determine the total count of fungi and yeasts, and classification of fungi and yeasts isolated The study on the following results:
1 - 2 bacteriological examination - examination of fungi and yeasts
As explained in this study, the health actions to be taken to improve the health status of products during manufacture, circulation and protect consumers from any damage, especially of food poisoning.
