Abstract

In Egypt, several detailed studies have been carried out on analysis of buffalo, cow and goat milk, but it is very rare for camels milk. Consequently, the present study was carried out to investigate the chemical and microbiological evaluation of camels milk, and to assess for the protective role of camels milk against the toxicity of heavy metals. Therefore, we suggest to collect a total of 50 random individual samples of raw milk from different places in the province of Marsa Matrouh. Samples were dispatched to the laboratory with a minimum of delay where they were examined chemically and microbiologically.
Out of the present study the results indicate the following:
I. Chemical and sanitary evaluation:.
• Acidity percent: The titratable acidity of the examined camels milk samples varied from 0.08 to 0.20 with a mean value of 0. 13 ± 0.004.
• Total solids: The mean value of total solids of examined camels milk samples was 12.48 ± 0.19% and ranged between 10.18 and 14.63%.
• Fat content: The mean value of fat content of the examined camels milk samples was 3.38 ± 0.08%.
• Solids-not-fat: The mean value of solids-not-fat in the examined camels milk samples was 9.09 ± 0. 17%.
