Abstract The present work is conducted on quantities of wheat germ isolated from cylinder mills, from the most known varieties cultivated in Egypt i.e: Giza 155 and Chenab 70. The most important results obtained are: 1) the percent of the germ in the varieties Giza 155 and Chenab 70 is 3.39 % but in the imported varieties, it is 3.39%. 2) the moisture content is higher in the germ than in the whole grain. 3) the ash content in the germ is approximately 3 times higher than that in the whole grains. 4) the total protein in the germ is 3 times higher than that of the whole grains. 5) nearly all the bound amino acids are found in the whole grains and the germ of the three varieties. The percent of reducing sugars in the germ of the three varieties is studied as well as the oil percent and vitamin (E) content. |
