Abstract

Antioxidants (AH) have gained much interest since they prevent or delay lipid peroxidation and protect the body from ageing and various chronic diseases e.g. cancer, cardiovascular and Alzheimer. The main mechanism of the antioxidant activity is scavenging the free radicals either produced naturally in the living cells or as a result of exposure to xenobioties e.g pesticides and pollutants. Phenolic compounds constitute the most weidly distributed natural antioxidants in living organisms. Therefore, it was found important to study the structural features of the phenolic compounds to posses an antioxidant activity i.e. structure- activity relationships, SAR and quantitative structure-activity relationships, QSAR. The present study evaluates both the free radical scavenging activity against DPPH., and hydroxyl (OH.) radicals, and the antioxidant activity of 41 phenolic and related compounds.
