Abstract Effect of the thermal treatment of fat on the physical, chemical properties and biologiCal values of mutton fat and cow depot fat is studied . The effect of fat diet content on food consumption of albino rats for thermally treated and untreated fats in investigated . Free fatty acids percentage expressed as oleic acid is lower in mutton tail fat than in cow depot fat. Thiocyangen number shows the same trend. |
