Abstract The pomegranate the higher protein, lipid, fiber and ash while guava seed contained higher carbohydrates. The wheat flour 72% extraction contained 84.33%, 13.19%, 1.24%, 0.56% and 0.68% carbohydrates, protein, lipids, fiber and ash respectively. Pomegranate peels, it was found to contain 15.91, 7.56, 18.1, 15.67 and 42.67% protein, lipids, fiber, ash and carbohydrates respectively, while in case of guava seed contained 1.41, 2.1, 3.33, 6.78 and 86.38% of the same content, respectively. Supplementation of broad with guava seed and potato peels was associated with the increasing of protein, lipids, fiber and ash than that of bread without supplementation. These increases in protein, lipids, fiber and ash may due to increase these nutrients in pomegranate peels followed by potato peels and guava seed. Potato peels had 1004 p.p.m Fe, 143 p.p.m Cu, and 4 p.p.m Zn. , guava seed had low content of these elements. It had 413 p.p.m Fe, 200 p.p.m Cu, and 12 p.p.m Zn, and pomegranate peel content of these elements. It had 306 p.p.m Fe, 189 p.p.m Cu and 7 p.p.m Zn. Potato peel, guava seed and pomegranate peels contained had very low amounts of pb. |
