Abstract

The baby foods manufactured in Egypt are cemposed of mixtures of cereal and legumeflotxrs, with the excepttion of superamine wNch contains 10% skim millcppxder and is f o r t i f i e d with vitamin D, The aim of this investigation is to formulate proteinrich baby food mixtures from locally available plant grotein sources such as barley (Giza 117), corn (Shedwan). Lima bean (Giza 3) and Soybean (Trasy) in a d d i t i o n t o some animal p r o t e i n s o u r c e such as skim milkpp~dea~nd ehicken intestine. The r e s u l t s indicated that: 1- a. The chemical analysis of the soumes proved that chicken intestine was found to have the highest value of crude p r o t e i n (52.06%) followed by skim milk powder (35.99%), soybean (33.645)lirna bean (24.365) barley (12.20%), corn (19.43%) and r i c e (7.20%). bbThe wetcr soluble protein of these sources can be ar~anged in descending order- as fol1ows:c’niclcen iut-, e s t i n e (17.88%) , soybem (16.10%), skim milk pow der (11.94%), lima bean (3.35%) , barley (0.96 , corn (0.79%) and rice (0.49%).
