Abstract Meat and meat products are the main sources of animal protein however, they are considered as a major vehicle of most reported outbreaks os food borne disease. Meat and meat products constitute a public health hazard either due to the presence of spoilage bacteria or human bacterial pathogen which may lead to infection or intoxication. A total of hundered and sixty samples of meat and meat products were collected from Assiut and Sohage cities markets. The samples include raw meat 50 minced meat 25, 25 each of sausage and beefburger represent meat products which require heat treatment for their cooking, also 25 samples of luncheon as well as 10 basterma samples represent food which may not need any cooking before eating. |
