Abstract Fifty randum samples of dressed poultry carcasses were collected from different shops located in Assiut for determining their sanitary condition. The result of organoleptic examination proved that 4%of samples showed grey colouration which is indicative of starting decomposition, while 26% smelt feshy and 4% were putrid. Birds which showed abnormalities in colour, odour and taste were obtained from the 3rd source. |
