Abstract

Apium graveolens L. (Celery), Anethum graveolens L. (Dill) and Petroselinium crispum Mill. (Parsley) were comparatively investigated for their phenolic and flavonoidal contents, and antioxidant potential (using EPR technique). The methanol extracts of parsley fruits demonstrated the highest TP and TF contents, while methanol extract of celery roots (MCR), aqueous extract of celery shoots (ACSh) and aqueous extract of dill shoots (ADSh) showed the most potent antioxidant activity. Fractionation of MCR on Diaion HP20 column led to the identification of fraction 8 (acetone fraction of the column) with the highest percentage of quenching .OH even at low concentration (82.1 % at 0.01 mg/mL). Similarly, fraction 13 (from ACSh extract) (acetone fraction of the column) showed the highest percentage of quenching .OH even at low concentration (74.29 % at 0.01 mg/mL), and fraction 16 of ADSh extract (75 % methanol) was the only most potent hydroxyl radical scavenger with 62.92 %.
