Abstract

A total of 135 samples of Egyptian white soft cheeses including Tallaga, Bramily and Kareish chesse samples (each 45) were collected randomly from dairy shops, supermarkets and street vendors in Assiut governorate, Egypt, in the period from March to July 2022.
The collected samples were subjected to sensory evaluation which based on 3 main attributes, appearance, texture and flavor, and their resultant in the overall acceptability (OAA). In addition to the sensory evaluation, all the samples were examined for coliforms, fecal coliforms and E. coli in order to ascertain the bacteriological quality.
The obtained results indicated that all the examined cheese samples were of good sensory evaluation with variations in the scoring.
For coliforms, 93.33%, 91.11% and 77.78% of the examined Tallaga, Bramily and Kareish cheese samples, respectively were acceptable according to the Egyptian standards.
The results of fecal coliforms showed that, 97.78%, 93.33% and 48.89% of the examined Tallaga, Bramily and Kareish cheese samples, respectively were acceptable according to the Egyptian standards.
About the E. coli results, all the examined Tallaga cheese samples were free and acceptable, while 97.78% and 64.44% of the examined Bramily and Kareish cheese samples, respectively were acceptable according to the Egyptian standards.
