Abstract

6. Summary
A total of 200 random samples of chicken meat products including Fillet, Gizzards, Burger, Luncheon, and Nuggets (40 of each) were collected from different supermarkets at Alexandria province. The samples were products as examined bacteriologically immediately after arrival to the laboratory for isolation and identification of some pathogenic bacteria that may contaminate these E. coli, Salmonellae, Yersinia enterocolitica, Campylobacter jejuni, Staphylococcus aureus, Bacillus cereus and Clostridium perfringens.
The obtained results revealed that the incidence of E. coli in the examined samples of Fillet, Gizzards, Burger, Luncheon, and Nuggets was 35, 37.5, 22.5, 20, and 7.5%, respectively. It was observed that the highest incidence was recorded in Gizzards followed by Fillet and lastly Nuggets.
Serotyping of the obtained isolates of Enteropathogenic E. coli revealed the detection of O78 serotype (EHEC) in the examined samples of Fillet, Gizzards, Burger, and Nuggets with an incidence of 7.5, 12.5, 2.5, and 5%, respectively. O111:H4 serotype (EIEC) in the examined samples of Fillet, Gizzards, and Burger with an incidence of 7.5, 2.5 and 5%, respectively. O124 serotype (EPEC) in the examined samples of Fillet, Gizzards, Burger, and Luncheon with an incidence of 5, 7.5, 7.5, and 5%, respectively. O55:H7 serotype (ETEC) in the examined samples of Fillet, Gizzards, Burger, and Luncheon with an incidence of 5, 5, 2,5, and 5%, respectively. O142 serotype (EPEC) in the examined samples of Fillet and Luncheon with an incidence of 5 % for each. O2:H6 serotype (ETEC) in the examined samples of Fillet, Gizzards, Burger, Luncheon, and Nuggets with an incidence of 5, 7.5, 5, 5, and 2.5%, respectively.
The incidence of Salmonellae in the examined samples of Fillet, Gizzards, Burger, and Luncheon was 10, 10, 5, and 5%, respectively while Nuggets samples were found to be free from Salmonellae.
Serotyping of the obtained isolates of Salmonellae revealed the detection of S. Enteritidis in the examined samples of Fillet, Gizzards, Burger, and Luncheon with an incidence of 5, 5, 5, and 2.5 %, respectively. S. Haifa in the examined samples of Fillet with an incidence of 2.5 %. S. Virchow the examined samples of Fillet and Gizzards with an incidence of 2.5 and 5%, respectively. S. Infantis the examined samples of Luncheon with an incidence of 2.5 %.
The incidence of C. jejuni in the examined samples of Fillet, Gizzards, and Burger was 15, 10, and 2.5%, respectively. The incidence of Y. enterocolitica in the examined samples of Fillet, Gizzards, Burger, Luncheon, and Nuggets was 7.5, 5, 5, 2.5, and 2.5%, respectively. The incidence of B. cereus in the examined samples of Fillet, Gizzards, Burger, Luncheon, and Nuggets was 2.5, 2.5, 2.5, 5, and 2.5%, respectively. The incidence of S. aureus in the examined samples of Fillet, Gizzards, Burger, Luncheon, and Nuggets was 27.5, 22.5, 15, 15, and 5%, respectively. The incidence of C. perfringens in the examined samples of Fillet, Gizzards, Burger, and Luncheon was 7.5, 7.5, 2.5, and 2.5%, respectively.
