Abstract Soybean “Glycine max” is an annual herbaceous plant (Family: Fabaceae/subfamily: Papilionoidae), it is globally considered as one of the most important leguminous plants (Encyclopedia of life, 2012). This legume species is native to East Asia and the earliest known cultivation in Africa was in Egypt in 1858, followed by Tunisia in 1873 and Algeria in 1880 (www.soyinfocenter.com, 2017). It plays a fundamental role in food, feed and pharmaceutical industries. It is an economically important legume cash crop due to its high protein (40 %) and oil (20 %) contents as well as beneficial phytochemicals such as isoflavones, phenolic compounds, saponins, trypsin inhibitors goitrogens and oligosaccharides (Devi and Giridhar, 2013). Natural dietary phytoestrogens inside it can replace estrogen therapy, which can improve hormonal balance, and are highly effective in the treatment of osteoporosis in older men and women, especially post-menopause women, (patent/US5424331, Shlyankevich, 1994). |
