Abstract The main target of this study is preparing functional dairy product mainly low fat and low calories ice cream and frozen yoghurt using fat replacer and sweetener. The present work consisted of two parts. The first part dealt with preparation of ice cream while the second one concerned with the frozen yoghurt. The fat replacer used in the two products was Etenia 457 while the sweetener was Sativoside It could be concluded that; it could prepare a functional ice cream or frozen yoghurt with low fat contents and low calories to be more suitable for individual people. No clear or significant variations were observed between the data obtained for ice cream or frozen yoghurt from the properties which were studied. Finally, it could conclude that, Etenia 457 and Sativoside could be successfully used as partial fat mimetic in frozen desserts manufacture until 50 %and 75%. |
