Abstract

According to our study
1- Genotype Crawford is recommended as a very good source of protein and amino acids (reaching up to 83 % of its constituents), with highly nutritives value, as well as a good source of soya-saponin well known for their anticancer activity (Zhang et al., 2008).
2- Genotype G21 is recommended as a good source of phenolic compounds and vitamins, thus indicated for the use as antioxidant (Zhang et al., 2017), also it has high nutritive value.
3- It was noticed that both genotypes G35 and Crawford lack the presence of vitamins according to our analysis and that highest sugar content present in the genotype G35.
4- It was mentioned that different phytoconstituents precentatges may vary greatly according to the environmental contidtion & places of cultivates (Ammar et al., 2017).
It was clear that soybean seeds rich in amino acids, phenolics acids, flavonoids, isoflavonoids, saponin and vitamins. So it can be used for many biological needs and recommended for patients who suffer from certain diseases.
Soybean seeds is a major source of protein worldwide, the average protein content of soybean reaches up to 40%, it contains all essential amino acids and has low cost compared to other high quality protein sources, amino acid is useful for improving muscle growth, essential for normal healthy brain function, treatment of heart diseases and high blood pressure, needed for normal functioning of the central nervous system.
It was found that Soybeans (Glycine max) contain high amount of phenolic acids and flavonoids, which have strong antioxidant and anticancer activities.
Also soybean rich in vitamins such as tocopherols (Vitamin E), it is important antioxidants present in relative high concentration, it protects against the oxidation of polyunsaturated fatty acids. Biotin is a very important vitamin in soybean, it plays a role in maintaining blood sugar levels and in the body’s energy cycle, it can be used with type 2 diabetes.
Soybeans primary dietary sources of saponins, it was reported that saponins have anticancer activety in preneoplastic lesions in the colon.
