Abstract

One hundred and five Egyptian soft cheese samples including Domiati, Kareish and Baramily cheese (35 each) were randomly collected from different localities in Assiut city, Egypt. The samples were examined for determination of nitrate and nitrite levels by spectrophotometric method.
The obtained results showed that the average values of nitrate in the examined Domiati, Kareish and Baramily cheeses were 10.89, 14.05 and 14.23 mg/kg, respectively and the average values of nitrite were 0.20, 0.43 and 0.25 mg/kg, respectively. Positive samples (detectable levels) for nitrate in the examined Domiati, Kareish and Baramily cheeses were 88.57%, 91.43% and 100%, respectively; while, the positive samples (detectable levels) for nitrite were 80%, 68.57% and 85.71%, respectively.
Also, it was found that 8.57% of the examined Kareish cheese samples were above the Egyptian & Codex standards permissible limit of nitrate (50 mg/kg), and 2.86% of the examined samples above the Egyptian standard permissible limit of nitrite (2 mg/kg). Only, 2.86% of the examined Domiati cheese samples were above the Egyptian & Codex standards permissible limit of nitrate; while, none of the examined Baramily cheeses were above the Egyptian standard permissible limits (for nitrate & nitrite) and the Codex standard permissible limit of nitrate.
