Abstract This work aims to investigate the effect of irrigation resource; (Al-Batts Drain and El-Wadi Drain) of fish farms located at Fayoum Governorate on physical, chemical and microbial quality criteria of fresh mullet (Mugil cephalus) and tilapia (Oreochromis niloticus) fish species during frozen storage 180 days at -18ºC and different processing methods (smoking and frying). The main objectives of the current study can be summarized in the following items: 1- Investigate the effect of irrigation resource; Al-Batts Drain and El-Wadi Drain of fish farms located at Fayoum Governorate on physical, chemical and microbial quality criteria of fresh mullet (Mugil cephalus) and tilapia (Oreochromis niloticus) fish species. 2- Studying the effect of frozen storage conditions at 18ºC for 180 days on the pre-mentioned quality parameters of fish species studied. 3- Studying the effect of some processing methods; cold smoked and frying on total quality of frozen mullet and tilapia fish for 0, 2, 4, 6 months storage. 4- Determination of the polycyclic aromatic hydrocarbons (PAHs) levels as affected by irrigation resource, frozen storage periods and processing methods of mullet smoked and fried tilapia fish compared with the international acceptable levels. 5- Quality evaluation of investigated fish for human consumption based on the results obtained. |
