Abstract

Hotel management, food service and catering studies have been used alternately for decades to describe courses, diplomas or honors degrees offered to the job seekers who wish to work in hotels, restaurants, cafes and catering in hospitality establishments. In recent years, the use of “Hospitality” instead of “Hotels” has dominated the academic and become preferable by industry (Lew and Yu, 1995). However, the name of the 4 year degree in Egypt remains the very classic title ”Hotel Management or Hotel Studies for decades” (Hewedi et al, 1998).
In Egypt, research in tourism and hospitality education has been limited (Hewedi et al, 1998). This is similar to other countries, including China where Chen (1990), Zhao (1991), Lew and Yu (1995), and Xiao (2000) described the overall situation of tourism higher education (THE) in China and examined the major problems affecting tourism education. Additionally, Jin and Yu (1990) compared China’s tourism HE with that of the USA in terms of education development, students, faculties, curricula, teaching methods and facilities.
