Abstract A total of 200 random samples were collected from chicken and quail (n= 20 for each), and samples included liver, gizzard, kidney, breast and thigh muscle from each bird. Chicken samples included 10 birds from each of broilers and layers, including equal number of each of baladi and farm chicken. Samples were collected from different poultry shops at Sharkia Governorate. The collected samples were kept in ice box and transferred directly to Meat Hygiene Laboratory, Faculty of Veterinary Medicine, Zagazig University. The samples were extracted for heavy metals measurement and trials for reducing heavy metal lead were done. Heavy metals measured included, lead, cadmium, mercury and aluminum. (1) Lead: The results of lead concentration revealed that the mean ± SE values of lead (ppm) in the examined samples of liver, gizzard, kidney, breast muscle and thigh muscle of broilers (Baladi breed) were 1.48±1.37, 0.69±0.69, 1.36±1.36, 0.31±0.31 and 0.54±0.54 ppm respectively, while in layers (Baladi breed) were 1.42±0.62, 1.35±0.91, 1.35±0.79, 1.04±0.81 and 1.23±1.08 (ppm) respectively, but in broilers(Farm chicken breed) the results were 0.20±0.05, 0.08±0.02, 0.15±0.05, 0.03±0.01 and 0.05±0.04 (ppm) respectively, while in layers (Farm chicken breed) the results were 0.79±0.04, 0.38±0.12, 0.78±0.05, 0.35±0.10 and 0.20±0.12 (ppm) respectively, However in quail the results recorded in table 1 were 2.36±0.80, 1.71±0.48, 1.94±0.29, 1.67±0.68 and 1.49±0.38 (ppm) respectively. |
