Abstract
Dates, the fruit of the date palm (phoenix dactylifera), play a vital role in the economic and social lives of the people of north africa and the middle east. Dates are harvested and marketed at three stages of their development and they are khalal, rutab and tamr stages. Egypt was the top- most producer of dates with 1.501.799 tons or 19.69% of tolal world production.
