Abstract

This study aims to determine the microbiological quality of chocolate cake and cream cake samples. Those samples were collected from different sites of local markets of Damietta and Dakahlia governorates in September and October 2012. Microbiological examination of cake samples included total viable mesophilic count (TM), 30 °C/72h., total thermophilic bacterial count (TT), 45 °C/72 h., staphylococci count (SC), 37 °C/72 h., Aeromonas spp count (AS), 30 °C/48 h., enteric bacilli count (EB), 30 °C/48 h., coliform bacterial detection (CD), 30 °C/24 h., Bacillus cereus count (BC), 37 °C/72 h., Vibrio spp count (VS), 37 °C/72 h. and fungal count (TF), 25 °C/6 days. The obtained results for Microbiological evaluation of chocolate cake showed that, the highest value of TM was A4 being >2×105 cfu/g. But the lowest value was B22 being >1×102 cfu/g. All samples gave a positive results of TT; the highest value of TT was A8 being > 1×104 cfu/g. The results of SC were not found in 6 (40%) samples, while 9 (60%) sample gave a positive results varied between 3.7×101 to >1×103 cfu/g. AS was presented in all samples except A4 samples. EB was presented in nine samples. BC count was not in all samples, but maximum value was >1×103cfu/g. VS was presented in seven samples. TF were also counted and the highest values was in A4 being >1×103 cfu/g and the lowest value was in B27 being 27 (2.7×101) cfu/g. The obtained results Microbiological evaluation of cream cake showed that, the highest value of TM was C12 being 93275 (9.33×104) cfu/g. But the lowest value was C21 being 283 cfu/g. All samples gave a positive results of TT; the highest value of TT was C11 being 21295 (2.13×104) cfu/g. The results of SC were not found in one (7%) sample, while 14 (93%) sample gave a positive results varied between 30 (3×101) to 3500 (3.5×103) cfu/g. AS was presented in all samples results varied between 44 (4.4×101) to 875 (8.75×102) cfu/g . EB was presented in five samples. BC count was not in all samples, but maximum value was 1544 (1.54×103) cfu/g. VS were presented in three samples. TF were also counted and the highest values was in C12 being 9027 (9.03×103) cfu/g and the lowest value was in C23 being 44 (4.4×101) cfu/g.
Forty-two bacterial isolates were obtained from twelve different companies. Isolates was divided into ten different bacterial. Isolates were divided into ten different bacterial, (4، 7، 39), (26، 27، 34), (12، 18، 19، 20، 35، 38), (13، 37، 52), (30، 49 ، 51), (36، 44), (15، 46، 47), (8، 9، 21، 22، 23، 28، 29، 48،49،50), (1، 16، 17،33) and (2، 3، 17، 31، 32) gave Bacillus cereus, Bacillus subtilis, Pseudomonas spp, Escherichia coli, Salmonella spp, Shigella spp, Vibrio spp, Aeromonas spp, Micrococcus spp and Staphylococcus aureus, respectively.
