Abstract Lipids are a group of organic substances of fatty nature insoluble in water but are soluble in organic solutions. They are sources of concentrated energy, and essential fatty acids. Also they are vehicle for ingestion and absorption of fat- soluble vitamins, and gives palatability to foods. Lipids consist of fats, which are high in saturated fatty acids, and oils that are high in unsaturated fatty acids. |
