Abstract

The increasing number of elderly people is leading to an increased
demand on health care. The role of nutrition in the maintenance of aged
individuals health, management of chronic conditions, treatment of
serious illnesses, and rehabilitation of functional limitations has risen to
the top of the agenda for public interest and research during the last
decades. So, the present study was designated to know the effect of
producing some nutritional products from economical material on the
healthy and physiological of elderly or geriatric rats.
The study was carried out as follows: Moisture, protein, fat, ash,
some minerals and vitamins were determined in the vegetables tested
powder (carrot, squash, spinach) and bread supplemented with it.
Carbohydrate was calculated by difference. The results were recorded as
dry matter basis. This investigation was used 10, 15% of carrot, squash,
10% spinach bread powder and 15% of mixture of them(5% carrot, 5%
squash, 5% spinach) to basal diets for studying their effects on thirty
five female albino rats, each weighing (200±5g) , were used in this
investigation. All rats were fed on the basal diet for seven consecutive
days before beginning of the experiment for adaptation.
The rats were divided in to 7 groups female rats (5 rats each), all
groups were fed for 28 days on experimental diet as follows:
 Group (1): Rats was fed on basal diet plus 20% of bread powder as
control group
 Group (2): Rats was fed on basal diet plus 20% of bread powder
supplemented with 10% carrots.
