Abstract In this study, a total of 150 samples (30 each) of bulk tank milk, soft damiatti cheese, plain yoghurt, powdered ice cream and ice cream were collected from small scale dairy plants in Kafr El-Sheikh governorate except powdered ice cream samples were collected randomly from super markets. Collected samples were subjected for detection of penicillin using HPLC, preservatives and heavy metals (Pb, Cd, As, Cu & Zn) using AAS, penicillin could be detected in 2 bulk milk 1 soft cheese & 1 plain yoghurt with mean values of 415.28 +148.9, 1658.54 and 60.98 ppb, respectively. H2O2 was detected in 2 milk, 7 soft cheese & 11 plain yoghurt samples. The mean Pb levels in examined samples, respectively were 5.5+2.7, 0.2, 1.28+0.55, 1.32+0.6 an 0.0 ppm. Mean levels of Cd were 5.40+4.9, 0.2, 0.00, 0.35+0.22 and 0.0 ppm, respectively. As couldn’t be detected for Cu, the mean levels were 5.39+2.02, 2.58+0.24, 1.28+0.13, 2.34+0.24 & 1.33+0.43 ppm, respectively. While for Zn there were 2.7+0.19, 7.26+0.67, 10.22+0.44, 7.48+1.11 and 2.5+0.34 ppm, respectively. |
