Abstract

One hundred and twenty samples ; 30 each , of raw milk ,white salted cheese, white unsalted cheese and ras cheese were collected from dairy shops from different places in Al- Menofia governorate.
These samples were examined bacteriologically to determine their quality.
Raw milk:-
Bacteriological examination of raw milk samples revealed that the mean count value of coliforms (MPN/ml) was 1.61 x 107 ± 5.96 x 106. The incidence of coliforms was detected at 100% of samples. E.coli could be isolated from 23.33% of examined samples. Serological typing of isolated E.coli proved that they belonged to O111, O124 and O119.
E.coli, Citrobacter diversus, C. freundii, Enterobacter aerogenes, Ent. agglomerans, Ent. cloacae, Klebsiella pneumonia sub. spp. ozaenae and K. pneumonia sub. spp. pneumoniae could be isolated from examined samples at different percentages.
