Abstract

A total of 120 samples were taken from fresh dressed pigeon which collected from different shops in Mit-Gharnr city. Pigeon carcasses were examined mycologically according to the following scheme: 40 samples were collected using skin excision technique from the outer surface of the breast region as well as from the breast muscles after surface cauterization with hot spatula (20 of each) before any treatment. 40 samples were collected using skin excision technique from the outer surface of breast region as well as from the breast muscles after surface cauterization with hot spatula (20 of each) just after treatment with sodium benzoate solution 0.1 % by dipping for nearly one minute.
40 samples were collected using skin excision technique from the outer surface of breast region as well as from the breast muscles after surface cauterization with hot spatula (20 of each) just after treatment with potassium sorbate 2.5% by dipping for nearly one minute (Russell, 1991). Treated and un treated pigeon carcasses were kept in domestic refrigerator adjusted at 4±1 QC for determination of their mycological profile during their chill storage. Organoleptic examination: . , The result showed that the control samples which not treated still accepted by organoleptic examination ( colour, odour and consistency) until 5th day. While sodium benzoate (0.1%) treated samples still accepted until 7th day and potassium sorbate (2.5%) treated samples
