Abstract

Potato (Solanum tuberosum L.) is one of the most important vegetable crops in the
world. Potato ranks fourth position in the world after wheat, rice and Maize as noncereal
food crop.
potatoes have a high nutritional value, where the potato tuber contains about 80%
water and 20% solids and the starch equivalent of 85% of the solids and the protein
rest. potatoes contain many vitamins, including: niacin, riboflavin, and thiamine, and
vitamin C. It also contains some minerals, like calcium, iron, magnesium, phosphorus,
potassium, sodium, and sulfur
In Egypt, it is considered one of the most important vegetable crops in consumption
as well as one of the cash crop in export.
