Abstract

br>milk SUMMARAY AND CONCLUSIONGoat’s milk is the most popular milk in Sinai, where the population of goats in North Sinai reached 74.936 in year 2009. On the other hand the population of Sheep, Camels, (Cow’s and Buffaloes) were in the same year 20256, 10027, 61503
Respectively. So, it is very important to take care of goat’s milk in comparison with cow’s milk.
This work studied the effect of feeding goats and cows with untraditional agricultural by- products (olive pulp and date stone)
on the chemical and bacteriological quality of cows and goat’s milk , Also, the produced milk was subjected to SCN- yoghurt manufacture .
the ration was Substituted 20% olive pulp or date stone than there samples were collected and analyses after 13 days from the beginning of feeding
