Abstract . The aims of this work were to investigate: 1- Quantitative and qualitative analyses of cane molasses of Egyptian Sugar and Integrated Industries Company (ESIIC); 2- The factors affecting on composition of molasses such as: sugar manufacturing process (specially production of sugar by sulfitation process), quality of industrial water as well as handling and storage conditions of Egyptian cane molasses; 3- The effect of molasses composition on alcohol fermentation; 4- The answers of questions: why both of cane molasses produced at Kous and Kom Ombo are clearly noticed that decomposed during storage time? why they are foaming and overflow from the tanks?, why both these molasses are low grade in alcohol fermentation causing low fermentation efficiency?. 5-What are the requirements necessary for keeping cane molasses without any decomposition. |
