Abstract

A total of seventy five samples of meat products including 25 samples from each of kofta, sausage and shawarma were collected from different supermarkets” and shops in Giza governorate to be examined bacteriologically to determined is sanitary quality. The mean aerobic plate count values were 28.4XI0S, 24.3XI04 and 7XI05 CFU/g, respectively while that of Enterobacteriaceae were 10.14Xl05, 5Xl04 and 37.8Xl04 CFU/g,’ respectively. As for the Coliforms (MPN) were 7XI01, 3XI01 and 4.59Xl01 CFU/g , respectively. Laboratory results
indicated that Escherichia coli, Salmonella spp, Klebsiella spp, ’Proteus spp were isolated from a.totalQf..’2.S,’a’S~\~’\~~’l\d.\ at an’l.nc’l.llence of7(28%), 0(0%), 4(16%)
and 2(8%) respectively for kofta; 3(12%),2(8%), 1(4%) and 2 (8%) respectively for sausage; 5 (20%),1(4%),3(12) and 2(8%) respectively for shawerma , Further, Citrobacter spp was isolated from shawerma samples at an incidence value of 1(4% ). Serotyping of the 15 retrieved Escherichia coli isolates indicated that 12 of them were Enteropathogenic (EPEC) with an incidence of 80 % (0166, 078, 0126, 055, 026, 020, 025 : Kll, 0119, 0125 : K70, 0146, 0126) while the remaining three isolates were untypable. Tow salmonella serovars isolates were retrieved from a total of 25 sausage samples with an incidence of 8% .The two retrieved isolates were serotype as S. Buntantan. Only one salmonella isolate was retrieved from a total of 25 shawerma samples with an incidence of 4%. This isolate was serotype. as S. kentucky, No salmonella isolates were detected in kofta samples.
