Abstract

To combat with underweight problems in children several common and novel foods were newly formulated to raise their content of total calories; herbs used in order to raise the weight gain were also used.
Novel foods could be divided into 4 groups.
1-Pate de foie gras of animal and poultry liver (6 canned products from duck, goose, chicken, cow, buffalo and sheep livers.
2-Fruit- vegetable foods (3 products using avocado, raisin, banana, sweet potato, compressed date with coconut, sesame, sunflower seeds, cane syrup; rushnut and sugar was also used)
3-Nuts and seeds foods (6 products using roasted hazelnut, almond, pistachio coconut, pine, fenugreek seeds, chickpea with wheat flour, butter, corn oil, cane syrup and certain herbs like fennel, thyme tragacanth, chinese cubeb, mehalab as well as milk, honey and cane syrup)
4- Wheat flour baked foods, 6 products, including spongecake – high far, éclair, ghoraiyebe with almond, cheese – cake and pizza surface decorated with sheep’s tail tissue.
To improve the eating qualities smoking liquid was added during canning of liver pate products.
When underweight poses health consequences, they differ from those of overweight: they include respiratory disease, tuberculosis, digestive disease and some cancers. Underweight women may become infertile, and those who do conceive risk giving birth to unhealthy infants. An underweight women can improve her chances of having a health infant by gaining weight prior to conception, during pregnancy, or both, underweight also poses hazards when accompanied by undernutrition. An inadequate supply of nutrients and energy leaves the body underprepared to handily its many metabolic and physical tasks s.Aperson with out reserves will have a particularly tough battle against medical stress such as surgery or the wasting diseases of cancer and AIDs (Whitney, Eleanor and Rolfes, Sharon, 1993).Underweight is generally defired as 15 to 20 per cent or more below desirable weight for height. This condition, however, is much less common than overweight and obesity and may result from an underlying illness (Paul Inse et al., 2002).When an individual is under noised, nutrient reserves dwindle, tissue become deprived of essential nutrient and medical disorder results. When protein stores are depleted as muscle tissue is used as a source of energy, antibody production.
