Abstract This study was evaluating the nutritional value of uncommon sources protein like rice protein that could be used in manufacturing of certain food products in experimental animals (Rats). Seventy two adult’s male albino rats were randomly allocated in twelve groups each one contain six rats. Normal control group was fed rice protein -free basal diet. Groups I, III, IVand V were fed experimental basal diet with supplementation levels with rice protein as 10, 20, 30, 40 and 50 % respectively. Diabetic control group was fed rice protein -free basal diet. Groups I, II, III, IVand were fed experimental basal diet with supplementation levels with rice protein as 10, 20, 30, 40 and 50 % respectively. The nutritional course with rice protein was extended up to four weeks. At the end of feeding course, lipid profiles (Total cholesterol, Triglycerides, HDL-c, and LDL-c renal functions (Creatinine and Urea levels) and liver functions(AST, ALTand ALP) were assessed in addition to evaluation serum minerals profile (Ca, P, Mg, Zn, and I).serum iron indices profile( Fe, Ferritin,haemoglobin and hematocrit). were also examined beside hepatic detoxifying enzymes titre (GSH, GSHP, GSSGR and GST). Serum glucose level Obtained results revealed that group V that received 50% of rice protein for both normal and diabetic groups had a significant increased in body weight than other groups. Group V that fed 50% of rice protein illustrated a significant decreased in lipids profile for both normal and diabetic groups, liver enzymes titre groups III and IV that fed 30 and 40% of rice protein showed a significant decrease in AST, ALTand ALP for normal group whereas diabetic groups showed a significant decrease for group III and V that fed 30 and 50% of rice protein. Group III and IV that fed 30 and 40% of rice protein showed a significant decrease inkidney function for normal groups but diabetic groups showed a significant decrease in group V that fed 50% of rice protein. Group V parameters revealed a significant increase in serum minerals, detoxification enzymes activity and serum glucose for both normal and diabetic groups. |
