Abstract Honey has been known since ancient times for its therapeutic and medical uses. It has been recently rediscovered its antibacterial, antitumor, and antioxidant properties by medical profession, particularly where conventional modern therapeutic agents are failing. Honey adulteration is an increasingly frequent phenomenos, resulting from limited availability and increase price of honey. Honey is adulterated by adding cane or beet sugar, acid- invert syrups, corn syrup (glucose syrup) and high fructose corn syrup. Substitution of honey with cheaper sugar syrups, expose healthy and risk groups like diabetic and hyperlipidimic consumers to health hazards. This honey adulteration results not only in economic consequence but also affect public health. This study aimed at providing a research into the chemical composition of honey sold in Menoufia governorate and to establish the quality of the honey available to a segment of the Egyptian population. Materials and methods The present study consisted of two parts: Part (1): Evaluation of honey quality, detection of refused or adulterated samples and determination of chemical composition of authentic samples of the three floral honeys (clover, cotton and citrus). |
