Abstract
to make use of the underestimated silver carp fish (hypophthalimchthys molitrix) as a result of low eating qualities and presence of much their fish bones penetrating the meat, the flesh was used for processing of both fish protein concentrate (fpc, prepared by ethanol- hexan extraction method).
