Abstract

Summary:-Fifty random samples of raw milk were collected from different markets and shops in Sharkia Governorate, Egypt. A survey was conducted to determine the hygienic quality of examined raw milk samples.It’s evident from the obtained results that the mean value of acidity% in examined raw milk was 0.16 ± 0.009The mean total bacterial counts/ml of examined raw milk was 1.4×108. The obtained results revealed that the prevalence of coliforms contamination was 88%, while the mean coliform count/ml (MPN/ml) in examined raw milk was 3.4×107.Citrobacter amalonaticus, Citrobacter diversus, Citrobacter freundii, Enterobacter aerogenes, Enterobacter agglomerans, Enterobacter cloacae, Enterobacter gergoviae, Klebsiella oxytoca and Klebsiella pneumonia subspecies pneumonia could be isolated at varying percentages ranged from 4% to 16%.Concerning the staphylococci count, the mean value in examined raw milk samples was 7.1×106 ± 2.7×106 (7×102 - 9.8 ×107).Staphylococcus aureus and Staphyloccus epidermidis could be isolated from the examined raw milk samples at 78% and 22% respectively.Salmonella failed to be detected in all examined raw milk samples.Concerning yeast and mold count/ml in examined raw milk, the mean value was 1.05×105 ± 0.29×104.
The hygienic and public health importance of isolated microorganisms as well as their control measures were discussed to improve the quality of raw milk to safe guard the consumers from infection.
