Abstract The present mvestigation was designed to study the bacteriological quality of 100 samples comprised four species of marine water fish namely (Sardine, Mullus spp. (Morgan), Pargus spp. (Barbone) and Clirysophyres (Dims)) (25 of each) which were collected from commercial fish markets in Alexandria govemorate over a period of 6 months. I So, this study was designed to throw a light on the hygienic quality of four common marme fishes sold in these markets Regarding to the microbiological status of the examined fishes,( Sardine, Mullus spp., Pargus spp. and Chrysophyres) the mean Total Bacterial counts values were 3.95 x 106 ± 1.26 x 106, 3.67 x 106±0.798 x106,382x106±0786 xlO6and2l6xlO6±0587x106CFU/g ,respectively, the mean total Enterobacteriaceae counts values were 6 57 x104±232xl04,335x105 ±0731x105,318x105 ±0752x105 and 1.76 x io5 ± 0.522 x i0 CFU/g ,respectively, the mean total coliforms counts values were 8.09x io3 ±2.59x io3, 1.24x io ± 0.379 x io, 1.32x to ± 0.418 x io5 and 4.07 x io± 1.81 x l0 CFU/g ,respectively, the mean total enterococci counts values were 6.04 x 1o3-f- 2.81 x 10’, 2.05x io4 ±0.6x io, 1.4lx 10± 0.43 x iO’ and 2.41 x io4 H ± 0.596 x io CFU/g ,respectively, While the mean total staphylococci counts values were 2.82 x io’± 0.723 x io3, 3.96 x io3± 0.907 x 10’, ____ 3.18 x lo’± 0.811 x io3 and 5.28 x 1o’± 1.41 x 10’ CFU/g ___ ,respectively, The incidences of different organisms in the examined fish species namely, Sardine, Mullus spp., Pargus spp. and Chrysophyres for total Enterobacteriaceae were 84, 92, 100 and 92 % respectively, for total coliforms 72, 92, 100 and 92 % respectively, for total Enterococci 84, 100, 100 and 100 % respectively and for total Staphylococci 92, 100, 100 .4” and 100 % respectively for the aforementioned fish species. . ii., Correlation between the microbiological load and fish species results in non statistically significant differences in the mean total bacterial counts and total Staphylococci counts between the four aforementioned examined fish species. While, there are correlation between the microbiological load and fish species results in statistically significant differences in the mean total Enterobacteriaceae counts between Sardine species (in one arm) and Mullus spp. and Pargus spp. (in the other arm). Also, Correlation between the microbiological load and fish F species results in there was no statistical significant difference between the mean of total coliforms counts of Sardine and Chrysophyres, and also WE there is no statistical significant difference between the mean of total coliforms counts of Mullus spp., Pargus spp. and Chrysophyres. But, there was a statistical significant difference between the mean of total coliforms counts of Sardine (in one arm) and both Mullus spp. and Pargus spp. (in other arm). And, Correlation between the microbiological load and fish species results m there was no statistical sigmficant difference of means Enterococci counts value between Sardine and Pargus spp. |
