Abstract

A total of 100 random samples of retailed fresh fishes namely, Tilapia nilotica, Bagnis bjal (Bayad), Mullus species (Barbon) and Chiysophyres (Dinise). 25 fishes ofeach species were collected fiom different fish ma&ets in Cairo Governorate for bactexiological and mological evalur4ion.
Regaz’ding to the microbiological status of the examined fishes, (lilapia nilotica, B9us
bajacL Mullus spp, and Chrysophyits) the mean Total Bacterial Counts values were 2.49 x 106 ±
3.51 x 105, 1.85 x 106 & 3.3 x 105, 3.54 x ± 8.! x 104 and 2.6 x ± 3.4 x
respectively. Concerning the total Enterobacteriaceae count CFU/g for the examined
fishes were 7.8 x 10 ± 6.4 10, for Tilapia nilotica, 6.24 x 105 ± 8.1 x zo for Bagrus
bajad and 2.6 x 10 ± 6.2 x 10 for Mulius species, while for Chrysophyres were 1.2 x
105 ± 5.2x 104.
Different Enterobacteriaceae organisms could be isolated in variant percentages from the examined fishes. These organisms were identified as Enterobacter Cloceae (4%), Eseherichia Coli (8%), Citrobacter diversus (4%), Klebsiella pneumonia (12%)Klebsiella oxytoca (16%), Shigella Sonnei (8%), Providencia spp. (4%), Serratia spp. (24%) and Salmonella spp. (0.0%) from Tilapia nilotica, Escherichia Coli (8%), Citrobacter diversus (8%), Klebsiella pneumonias (16%) Klebsiella oxytoca (12%), Shigella Sonnei (4%), Serratia spp. (12%) from Bagrus bajad, Escherichia Ccli (4%), Citrobacter (4%), Klebsielia pneumonias (8%), Klebsielia oxytoca (16%), Serratia species (8%) from Mullus species and as Eseherichia Coil (4%),Klebsiella pneumonia (12%), klebsiella oxytoca (12%), providencia spp (4%) and serratia species (4%) from Chrysophres.
The mean total Coliform count CFU/g. of the examined fishes were, 2.9 idO5 ± 4.5x104,1.1x105±3.4x104,9.2x104±2.2x104,and8.1,c104±3.lxl04forTilapia nilotica, Baipis bajad., Mulbs spp. and Chtysophytts, respectively. While the mean total Enterecocci countsvalueswere 1.8 x to ± 3.1 x ion, 1.1 x io ± 21 x 104, 2.1 x l0 ± 6.1 x to, and 1.9 x 10 ± 5.2 x 10 CFU/g, respetively. Also the mean Total Staphylococci Count were,7x 10± I.2x 103,6.4x 10± i.7x 10,2.1 x 102±7.1 x 102,and2.5x io±s.o x 102 CFU/g, respectively.
Correlation between the microbiological load and fish species results in no significant difference in the mean total bacterial counts between the mean values of both Tilapia nilotica and Bagrus Bajad, also there is no significant difference between Mullus species and Chrysophyres (P<0.05). But there was a significant difference between the mean values of (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophyres) in the other side (P<0.05).
While, there are correlation between the microbiological load and fish species results in statistically significant differences in the mean total Enterobacteriaceae counts between (Tilapia nilotica and Bagrus bajad) in one side and (Mullus species and Chrysophyres) in the other side P<0.05.
