Abstract This work was carried out to investigate the role of meat and meat products in transmitting zooanthroponotic bacterial diseases to man. A total of 450 random samples were collected from various animal carcasses as well as different meat products (50 from each of beef carcasses, sheep carcasses, goat carcasses, pasterma, minced meat, hamburger, sausage, luncheon and frankfurter) from El-Behira and Alexandria Governorates. The obtained results revealed the following: Bacteria isolated from meat and meat products: 1. Bacteria isolated from fresh meat: The isolated bacteria from beef carcasses were E. coli (14%), Salmonella (8%), Shigella (4%), Yersinia enterocolitica (4%), Staphylococcus aureus (10%), Streptococci (6%) and Corynebacterium (18%). The isolated bacteria from sheep carcasses were E. coli (12%), Salmonella (12%), Shigella (8%), Yersinia enterocolitica (4%), Staphylococcus aureus (18%), Streptococci (12%) and Corynebacterium (16%). The isolated bacteria from goat carcasses were E. coli (10%), Salmonella (4%), Shigella (6%), Yersinia enterocolitica (2%), Staphylococcus aureus (14%), Streptococci (8%) and Corynebacterium (16%). |
